This Wednesday we are thrilled to welcome behind the bar a natural legend of the Northern Rhône, Hervé Souhaut from Domaine Romaneaux-Destezet. Hervé has been crafting since 1993 some of the most expressive wines on the northern granitic hills of Ardèche, a area partially part of St Joseph. Along the Doux river, Hervé is farming with the organic and regenerative principles a little more than hectares, including the Sainte Epine, a historically famous coteau facing Hermitage. He is also involved since a few years in a project with a wine-lover neighbor who decided to replant some hillsides near Romaneaux: Les Marécos. Tonight, we will explore with Hervé the new release of the 2017:
