Our friend Marc Ollivier created Domaine de la Pépière in 1984 with a few hectares of vines from his uncle, and soon became one of the most respected wine makers of the Loire Valley. Always harvesting by hand and fermenting with wild yeasts (a rarity in those days) Marc progressed into organic agriculture and acquired superb vineyard sites, primarily on granite terroirs, enabling him to produce extraordinary single vineyard wines that age beautifully for twenty years and more. As Marc nears retirement we offer this initial tribute with some of the estates finest wines accompanied by a selection of New England oysters.
